Every Christmas I make a lasagne. Every Christmas I have leftover ricotta and look for recipes to use it up. These muffins are low carb and low sugar. They should be stored in the refrigerator in a covered container. They can be frozen. Defrost overnight in the refrigerator. They can be warmed up a few seconds in the microwave.

Mushroom and Wild Rice Soup (Instant Pot)

If you have recently gotten an Instant Pot, you might enjoy making this soup. It was very easy to make and turned out great. This is a vegetarian version but I'm definitely going to make one with beef broth and meat. It would be like a Stroganoff soup. Yum!

This is the moistest cornbread I've ever made. Even my husband who hates cornbread loves this! Starts with a mix, add creamed corn, cheese, and peppers. Yummy!

I found this recipe on the internet quite a few months ago and have been hooked ever since! The only change I made is that I add extra cheese to the top. This is the ULTIMATE comfort food! It is also easy, quick and inexpensive.
