What's the difference in cinnamon and why does it matter?

But there are three kinds: Cassia, Vietnamese, and Sri Lankan. We're most familiar with cassia. Vietnamese is brighter and more flavorful. Sri Lankan is mild and fruity.
I keep all three on hand but you will do well if you have a really good Korintje cassia and Vietnamese. (Don't miss the deals above.)
And cinnamon chips with a mix of cassia and Vietnamese will make a magical difference also.
