I’m Amy Symington, and my love for plant-based cooking was one of the many reasons I decided to become a Nutrition Professor and Researcher at George Brown College in Toronto, Canada, where I examine why and how food affects our health – for better or for worse.
One of the things I’ve come to accept as canon is that diets that emphasize plants – that’s fruits, veggies, legumes, nuts, seeds and grains – are best for longevity, energy and disease prevention. Science wholeheartedly supports this belief, and it’s why I try to use as many whole, plant-based foods as possible when cooking and developing recipes for myself and my clients.
