GAME RECIPE: WARM MEAT SALAD - Always delicious
How about a fast, autumn after-work dish? Chanterelles, pickled gherkins and mortadella add the special taste to this warm meat salad with wild boar fillet enjoyed by the whole family. And it doesn’t take long to prepare this dish. Hungry now?

Ingredients
(Serves 4)

400 g wild boar fillet
4 tbsp oil
8 slices mortadella (1 cm thick slices)
300 g fresh mushrooms
300 g fresh chanterelles
1 jar pickled gherkins
1 tsp paprika powder
1 tsp cayenne pepper
salt
0.5 l cream
3 tbsp flour
pepper
60 g parmesan cheese
50 g butter

Cut the boar fillets into small dices, briefly sear in 2 tbsp of oil and season well with cayenne pepper, paprika powder and salt. Take the meat out of the frying pan. Then put the meat into a buttered oven dish.

Cut mushrooms and chanterelles into fine dices and sear briefly in 2 tbsp of oil. Take out of the pan and add to the meat. Cut mortadella and gherkins into fine dices and add to the meat as well. Mix all ingredients well.

Mix cream with 3 tbsp of flour and whip lightly. Season with salt and pepper. Pour the cream over the meat salad. Cover with grated parmesan cheese and flakes of butter.

Place in preheated oven at 240°C and cook for about 30-35 minutes.
