Ideas for taking care of ourselves while staying home.

Howdy folks, it’s been a few days since our last email. We’re sorting through some things here on the backend: trying to get a VERY tiny Facebook ad campaign going to generate more pickup orders and doing a little bit of self-care.

Heard that! Your eyeballs rolled right? Yeah…“self care” can be a wishy-washy, woo woo term but right now, focusing a bit more on yourself is a good way to help make it through the social distancing. Below are several ideas for taking care of yourself until such a time that we can all start engaging with others.

dance party!Virtual dance parties!
If you follow us on social media, you might have noticed our Halsted staff had an impromptu dance party with passersby outside the windows. It was all good fun with everyone #socialdistancedancing. There’s no reason why you couldn’t have your own dance party via FaceTime. Pick a song and dial up a few friends!

Sesame Street stampsWrite letters.
Yes, you could just text your family and friends but where’s the fun in that? Writing an actual pen-to-paper letter does take time and a little more thought than just jotting a text or email. But it provides your recipient with a spark of joy when they get a physical letter to read. Doodle in the margins or outside the envelope. Let the kids put stickers on it. Make it special. You’ll feel good and so will your friend. And buying stamps also may help the USPS.

Something smelly.
Smell is one of our key memory triggers and can help calm nerves, encourage fond memories, and allow us to meditate or reflect. Candles and incense are the obvious scented tools but also consider simmering a pot of spices in water on the stove. Consider lighting something nearby while you work from home or simmering a spice pot while helping the kids with homework.

Something tasty.
Chocolate, vanilla, mint, …even salty carbs can all be used to create a tiny moment of joy. In moderation, of course. Don’t scarf down 4 pints of vegan ice cream in 2 days (BTDT). That’ll backfire and you won’t have any for the rest of the week. 😝 The point is, pick something you LOVE, even if it’s just one bite, and take it slow. Think on it as you taste it. Close your eyes. Enjoy.

Trying new recipes.
Included below is our recipe for Mickey’s SOS Oatmeal Cookies. Jo created these to satisfy Mickey’s dessert cravings in a healthier way. They are from our current cookbook, which contains several recipes from our menu but also recipes that simply make sense for home, like these cookies.

Mickey’s SOS Oatmeal Cookies

Yield: 24 cookies

Ingredients:
⅓ cup raw cashews or ½ cup applesauce
6–8 Medjool dates, pitted
½ banana
¾–1 cup water
Juice of 1 large orange
1 teaspoon vanilla extract
1 cup oat or rice flour
3 tablespoons ground flaxseed
1½ teaspoons ground cinnamon
¾ teaspoon baking soda
¾ teaspoon baking powder
½ teaspoon ground nutmeg
Zest of 1 orange
2 cups quick-cooking oats
¾ cup raisins
½ cup walnuts, chopped
 
Directions:
  1. In a small mixing bowl, cover the cashews and dates (or just the dates if you are using applesauce in place of the cashews) in water. Soak for 30 minutes and drain.
  2. Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
  3. In a blender or the bowl of a food processor fitted with the metal “S” blade, place the soaked nuts or applesauce, dates, banana, ¾ cup water, orange juice, and vanilla. Process until combined. If the mixture seems too dry, add the remaining ¼ cup water and process again.
  4. In a large mixing bowl, sift together the flour, flaxseed, cinnamon, baking soda, baking powder, and nutmeg. Add the orange zest and stir to combine.
  5. Stir the nut and date mixture into the flour mixture. Add the oats, raisins, and walnuts and stir to combine.
  6. Using a small ice cream scoop, form balls of the dough and place onto the prepared baking sheets. Bake for 10 to 12 minutes. Remove from the oven. Cook on a wire rack.

Variation: If you prefer your cookies a bit sweeter, replace the water with natural, unsweetened apple juice. You can also add a pinch of salt if you’re not on a low-salt diet.

Baker’s Notes: If you don’t have oat flour, you can make your own by grinding oats in a high-speed blender or food processor until they reach a powder-like state.

It’s no problem to make these cookies gluten free—just use gluten-free oats. But the quick-cooking oats definitely work better in this recipe.

Press lightly with damp fingertips because these are denser than regular cookies.
