Note from the editor

One of the most dynamic sectors of the food industry is the future of meat — both plant-based protein substitutes that mimic the taste, texture and appearance of food from animals, and the lab-grown meat that several startups are in the midst of developing.

This week, I'll be at the epicenter of this trend. I'm in Berkeley, California for the Good Food Institute's conference. I'm here to listen and learn about the new developments on the horizon. I'll also be moderating the pitch panel, during which six startups will share their ideas. I'm really excited to find out more about the science behind the protein of the future — especially to hear more about many of the ideas that may be on the way.

I'm not the only one who's excited about the future of meat. The conference, all day Thursday and Friday, has been completely sold out for weeks. If you aren't here in Berkeley, you can follow the livestream. You can also follow me on Twitter as I share the goings-on of the conference. (And if you are here in Berkeley, I'd love to meet you!)

Thanks, as always, for reading!
