Our store manager got me hooked on easy meals made with Texas corn cakes.
She was a single mom who worked and had busy teenagers. Food had to be quick, good, and satisfying. She could make corn cakes, put a scoop of chili on them, and they were almost emergency tamales.
If she was really in a hurry, she could pour syrup over the corn cakes or just make waffles.
