Our parents and our grandparents set some dough aside when making bread so they could make cinnamon rolls. There's a better way!
Bread dough is not pastry dough. It's not as sweet or as light as it could be. Chances are, it has only half the volume of those fluffy rolls that you find in the airports.
Years ago, way back before the pandemic, we had a retail store open. A lady came in and bought a bunch of raised, glazed donut mixes.
"I'm not buying these for donuts. These make the very best cinnamon rolls!"
The light went on. It didn't take us long to get to the test kitchen. She was right, they do make the very best cinnamon rolls.
Instead of using bread dough, use a raised donut mix. It's much softer, fluffier, and built to taste like a pastry--not bread. No wonder it's so much better.
