Bicol express is a traditional dish from the Philippines. The Bicol region is famous of its creamy texture and spicy flavor. This is a type of stew made from coconut milk, chillies, pork, shrimp paste and some other spices. This recipe I'm making is simplified with just coconut milk, chillies and some beans, but it still tastes the same.

A fabulous way to use up the zucchini that's in season right now. If you have pre-shred your zucchini ahead of time and freeze it, this can be a very quick side dish on a busy day. I had the basil, mint and Parmesan on hand, so I added them in.

How to Make Flavored Oils

I realize that some of the things I send in call for oils. Do not buy them, you can make them as easy as ABC! I go to Vitamin Cottage and buy the herbs I need in the herb section. I never buy spices at the grocery stores because herbs are better tasting and cheaper!
