If you do plan on making some jam or jelly wait, don't pull that fruit out yet! First you need to l look at this product. Pomonas Pectin. I am always looking to lower sugar content in our diet, but even if that is not your focus..... Low sugar jam or jelly tastes so much more like fruit! You really should consider giving it a try. It is low sugar... so it is still sweetened but not to the point that you have more sugar than fruit. (You can also do a NO sugar jam too) Pomonas Pectin makes it work.
