In this simple recipe from associate food editor Rachel Gurjar, chicken wings marinate in a base of tamarind purée, fish sauce, brown sugar, crushed red pepper flakes, and cumin before hitting the grill. Brush the wings with more marinade as they cook for optimal flavor and just enough char, then serve them with crunchy onion, fresh cilantro, and a squeeze of lime.

INGREDIENTS

• ¾ cup tamarind purée
• ¼ cup fish sauce
• 2 Tbsp. light or dark brown sugar
• 1 Tbsp. crushed red pepper flakes
• 1 tsp. ground cumin
• 3 tsp. Diamond Crystal or 1½ tsp. Morton kosher salt
• 4 lb. chicken wings
• ¼ small red onion
• Cilantro leaves with tender stems and lime wedges
