Amazing things are happening in the fast-casual world. A popular burger and fries joint recently announced that they are switching entirely over to beef tallow for their fryers. That means you can splurge on french fries without worrying as much about oxidized seed oils infiltrating your mitochondrial membranes. I won’t say that tallow fries are a "health food," especially not ones being fried at high heat in tallow that’s been subjected to hours of frying, but this is a massive step in the right direction. Even if you don’t plan on eating tallow fries at a fast-casual restaurant—or anywhere else for that matter—it’s a sign that the trend is your friend. Things are moving in the right direction health-wise. All the work we’ve done over the years is finally paying off. The things we knew before they were cool are now becoming cool. Regular people are starting to care about the quality of ingredients in their food. This is exactly why Primal Kitchen did so well. It’s all connected. It’s all an indicator of where we’re headed. But What About the Quality of the Tallow? People are going to quibble about the quality of the tallow. I don’t know exactly what type of tallow they’re using, but that’s not really the point. The real point is the trend. The direction. Are things moving in a good direction or a bad one? Are they getting better or worse? Regardless of how you feel about the world in general, at least the food system is becoming more aligned with our way of thinking and eating. This Is Not a Free Pass to Eat Junk Food That said, I need to reiterate: this is not a free license to eat junk food just because it’s cooked in healthier fats. You can still gain fat eating a ton of tallow fries or milkshakes made with real milk and real ice cream. There will be far more enticing treats coming up. You’re going to want the fries more often. You’re going to want to eat the seed oil-free treats because there’s going to be a bigger demand for them, and they’re going to become tastier and more readily available. So you have to decide for yourself: Where and how much do these new options fit in your life? That’s your decision. |
