Happy Sunday, everyone.

For today's Sunday with Sisson, I'm going to let you in on a little culinary secret.

The other day I recommended that people coat their steaks in mayonnaise before searing. Many people expressed incredulity at the thought of coating their steaks in mayo. It does sound a little weird, I'll admit, but being a purveyor of high-quality mayo, I've spent a good amount of time coming up with alternative ways to utilize the product.

So believe me: Searing your steaks in mayo is a fantastic way to get a good crust. 

Obviously you'll want to use Primal Kitchen mayo because it's made with avocado oil and rosemary extract, which are oxidatively more stable than conventional mayo ingredients. Fry a steak using soybean oil based mayo and you're asking for problems. But if you have the good stuff, get out there, slather it on, and sear those steaks.

This doesn't only apply to steaks. 

I like chicken breasts seared using my pesto mayo. I like a Thanksgiving turkey coated in mayonnaise. I like burgers seared in chipotle mayo. Now, I don't do this every time, nor am I suggesting you do it. It's a nice parlor trick, a crowd pleaser, a sure-fire way to get a crunchy crust.
