This is a super easy, super useful recipe for preserved pickled lemons. Although they are best known as a staple Moroccan ingredient, used in dishes such as tagines and couscous. Since I began making them a few years ago I have found myself using them in all kinds or recipes up to an including washing off the salt and chopping up the lemon zest to pop into my famous rich Christmas cake (a desperate moment but it worked absolutely fine and I now do it on purpose).
