Autumn Recipes Starring Our Favorite Fall Fruit

“Millions saw the apple fall, but Newton was the one who asked why.” Here at The Old Farmer’s Almanac, we enjoy gravity, but we think that these recipes would have been a better use of Newton’s apples.
Dear Apple Lover,

Apples might be the most famous fruit in American culture. From Johnny Appleseed to apple pie and from apples for teachers to apples in our language, this crisp fruit is both legend and lunch. So when people ask us “How do you like them apples?,” we just smile and point to these recipes.

Two of the apple recipes in the 2019 edition of The Old Farmer’s Almanac are for pork-and-apple sausage and for chicken sausage with chardonnay and apples. These recipes take a little time, but they’re easy and you can personalize them to create your own version.

Moist, savory, and sweetened with reduced apple cider, the pork-and-apple sausages work as a delicious breakfast side or for grilling. The chicken sausage with chardonnay and apples is delicious as an entrée or sliced and served warm with cheese and crackers.

To make the sausage, first rinse, flush out, and soak your natural casings in water for 30 minutes. Next, cut 2¾ pounds of lean pork butt or shoulder and ¼ pound of pork fat into 1-inch cubes and grind them together. Mix the ground meat with 2 tablespoons each of chopped parsley and rosemary. Mix in 1 tablespoon of coarse salt, 1 teaspoon of lemon zest, and ½ teaspoon of black pepper. Mix well and freeze for 30 minutes, then grind the mixture again, using either a grinder or a food processor with the proper disk for your meat.

(If you prefer patties or rolls over links, you can skip the casing.)

Separately, simmer 1 cup of apple cider until it is reduced to ¼ cup of syrupy liquid. Set that aside and cook 2 small chopped leeks (white part only) and 1 tart apple (peeled, cored, and chopped) in 1 tablespoon of olive oil until the apple is golden, about 3 to 5 minutes.

Combine the meat mixture with the leeks, apples, and cider. Knead by hand and press them into patties or stuff them into the casing to make links.

Delightful Double-Apple Walnut Bread
While perfectly at home in a sausage, the versatile apple is a featured ingredient in this cool-weather bread. Serve it warm or cold for a great breakfast, snack, or dessert.

In a bowl, mix together 1 cup of applesauce, ½ cup of sugar, ½ cup of brown sugar, 2 eggs, ¼ cup of vegetable oil, ¼ cup of yogurt, and 1 teaspoon of vanilla. In a separate bowl, mix together 2 cups of flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, ½ teaspoon of cinnamon, and ⅛ teaspoon of nutmeg.

Combine the applesauce mixture, the flour mixture, ½ cup of chopped walnuts, and 1 cup of peeled and diced apple. Scrape the batter into a buttered 9x5-inch loaf pan, sprinkle 1 tablespoon of sugar on top, and bake on the center oven rack for 50 to 55 minutes.
Pumpkin Macaroni and Cheese
We can’t let apples have all the fun, when ’tis the season for pumpkin, too! This twist on a classic comfort food is a favorite at any respectable diner in the country (or at least it should be!).

Cook your pasta al dente in boiling salted water. In a deep skillet, melt 2 tablespoons of butter over medium heat. Add ½ cup chopped onion and 3 cloves chopped garlic and cook for about 5 minutes, until soft. Add 2 tablespoons of flour and stir to form a paste, cooking for 2 or 3 minutes. Slowly whisk in 1½ cups of milk, followed by 1 cup of shredded sharp cheddar cheese. When the cheese melts, add 1 cup of canned pumpkin, 2 tablespoons of chopped fresh sage, and salt and pepper to taste.

Mix the pumpkin mixture with the pasta and spread it in a large buttered casserole dish. Top with 1 cup of the cheddar cheese and ½ cup of seasoned bread crumbs. Bake in a 350°F oven for about 30 minutes, until the topping has browned.

Then be prepared for everyone at your table to ask for the recipe!
