The Eat More Starch Challenge

A study at Michigan State University found that adding 12 slices of bread to the daily diet of moderately overweight college-age men resulted in an average weight loss of 14 to 19 pounds in 8 weeks. Their health improved with a reduction in blood cholesterol by an average of 60 and 80 mg/dL. No other dietary changes were made and there was no increase in physical activity. By simply eating more starch weight was effortlessly lost and health was improved.
