Instant Pot Mushroom Risotto

I was skeptical that you could make risotto in an Instant Pot until I tried this recipe. But it turns out that pressure cooking your risotto is actually just as effective as constant stirring. The creamy risotto that revealed itself in a burst of steam was everything I want risotto to be. Mushrooms give this recipe a nice meaty heft, but the method works just as well without them.
