Lesson 1. This really good cream frosting makes a great filling.  Get the recipe below.
Lesson 2. You can put more filling between your cake layers than you think--up to 1"!
Lesson 3. Dipping frosting is faster than frosting.  Warm up a tub of frosting and dip cupcakes to the paper. Do it twice for a heavier coating.
Lesson 4. Meringue powder will make your frosting/filling last much longer.
Lesson 5. If you want your cake to fudgier, add mini chocolate chips. They will mostly melt in baking giving your cake a boost.
Lesson 6. Really good frosting can be as good as ganache.  It's quicker, less expensive.
Lesson 7. Use the best heavy whipping cream you can find.  It makes a difference.

The Very Best Cream Filling
1 four-ounce package of cream cheese (or 1/2 of an eight-ounce block), softened 
1/2 cup granulated sugar
1/2 cup powdered sugar
pinch of salt
1 tablespoon meringue powder
1 cup heavy whipping cream

Cream the granulated sugar with the cream cheese. Add the other ingredients and beat until light and fluffy.
