Even though I’m a grown woman, I still wake up on Christmas morning with a rush of adrenaline. I get up before anyone else in the house, including the toddlers, and sneak down to the tree to wait for everyone to wake up. But sometimes that takes HOURS, and I’m absolutely starving.

That’s what a make-ahead breakfast casserole was made for. You assemble it the night before the holiday, pop it in the fridge overnight and just stick it in the oven the next morning. The house is filled with delicious aromas, and if you’re lucky it’ll wake everyone else up and you can finally open presents! We’ve got an amazing hash brown casserole recipe below, and next week we’ll be coming out with three brand new French toast breakfast casseroles in the days leading up to Christmas. Make sure you visit HuffPost Food & Drink to find them. Have the happiest of holidays!

XO, Kristen
