I love peaches, anything with fresh peaches--peach pie, peach cobblers, peaches and cream.
But if friends stay over, I'm going to make them pannekoeken. They're so impressive and so fun. And very good, especially loaded with fresh peaches (or maybe strawberries).
"How do you make them rise like that?"
It looks impossible. They climb eight inches or more above the pan, and it's all steam--no leavening. And it takes less than 15 minutes.
I'll serve them with the best peaches I can find, maybe with whipped cream (I love caramel whipped cream on peaches made with a little caramel flavor) and a syrup for sweetener. (Consider buttermilk syrup.)
