Justin Narayan has an excellent book out called Everything is Indian in which he applies his cultural heritage and knowledge - Fijian Indian - to a variety of dishes, from noodles to eggs. In our extract this week, Justin gives us three excellent curries, two seafood in origin and one really interesting roasted chicken curry, which is inspired by some of Sydney's best chicken shops. Justin uses some interesting spice mixes and techniques in his cooking. These recipes will be sure to teach you a new trick or two.

Meanwhile, what dishes make Lennox Hastie's mouth water? The answer to that question is answered this week when our contributing chef reminisces about his time in San Sebastian and presents two evocative dishes from this noted culinary city on Spain's north-west coastline. Try these two very different recipes that evoke the spirit of Basque country.
