THE COUNT OLIVIER

 

As we all know, the origins of the Negroni are shrouded in mystery with conflicting claims about its invention. While some attribute it to Count Camillo Negroni, an Italian Aristocrat who took a likening to a stronger version of an Americano, others argue in favour of Pascal Olivier Count de Negroni, a decorated, Corsican war hero. While the debate between the cocktail's origins escalate, this month's cocktail pays homage to the latter. The legend of Pascal Olivier de Negroni.
 

The Count Olivier boasts an intricate mix of gin, mezcal, vermouth, Campari and dashes of chocolate bitters that brings forth a curious eccentricity of floral, tropical and classic bitterness with chocolate notes.
 

ATLAS BAR

 

Built in 2002, ATLAS Bar resides in Singapore's historic Parkview Square. Known as the "Gotham Building" for its Art Deco style. The bar itself matches the ornate exterior with marble, brass, and velvet.
 

The bar boasts a 15 meter high 'Gin Tower' with a vast collection of over one thousand three hundred Gins from around the world. Number 48 out of the World's 50 Best Bars, their classic cocktails celebrate both craftsmanship and tradition.

THE DRINK

 

Their Count Olivier recipe is a smoky, tropical twist on the Negroni. Complex and delicious.

 

THE RECIPE

 

15ml SCHOFIELD’S Dry Vermouth 

10ml ESTATE English Sweet Vermouth

20ml Campari 

5ml Del Maguey Vida Mezcal 

30ml London Dry Gin 

1 dash Chocolate Bitters 

5ml Tempus Fugit Banane Liqueur 

 

To recreate this Negroni, simply follow the instructions below:
 

Add the ingredients above to an ice-filled cocktail shaker and stir for 60 seconds until well-chilled and slightly diluted.

Pour into an ice-filled tumbler or old-fashioned glass.

Garnish with a slice of orange and serve
 

If you want to prebatch your drinks to serve quickly later, just add another 10ml water to the ingredients above, to ‘pre-dilute’ the blend
