Sunday I made breakfast for my sweetheart. It was a simple affair. She likes sweet onion diced and well-cooked. We had a couple ears of corn left over from dinner. I sauted the onions, added the corn from the cobs, and added a little Mexican seasoning. With that and some grated cheese, I made five minute omelets.
Raspberry (or other) Stuffed Pancakes. It's quick and easy to make stuffed pancakes but delightfully different. Consider mango, blueberry, and apple too.
Country Breakfast Pizza. There are a thousand ways to make a breakfast pizza. Instead of pizza sauce consider a white sauce or just olive oil. Add scrambled eggs, veggies, and meats such as bacon and sausage.
