Don't miss the cream cheese frosting recipe. We made carrot cakes all week. They are a big deal in the store but the frosting recipe is an even bigger deal. This will be your go-to recipe but there are a couple keys to success.
The whipping cream is the key ingredient. That's what makes it light and delightful. Use only heavy whipping cream. (We use whipping cream with 40% fat from Sam's Club.) The other key is the meringue powder. The original recipe calls for one tablespoon. Triple that. Now you have a frosting that will knock their socks off.
