What I Eat in a Day

Hey there, happy Monday.

Day to day, I’m pretty regimented as far as what I eat, and I’m going to go through a typical day here. What you’re about to read may sound routine, but I never get bored. We have our tried-and-true favorite recipes, but most often, I’m getting creative with what’s in the fridge. I never get tired of combining different vegetables, seasonings, sauces, and condiments to see what kind of magic ends up on my plate. Here’s more or less what I eat in a day. 

Morning: French-pressed coffee with organic heavy cream, a scoop of collagen peptides, and a teaspoon of sugar

I tend to stay fasted until early afternoon, but I look forward to a nice (big!) cup of coffee as soon as I wake up in the morning. Most of the time, I’m not hungry, but if I feel like eating something, I’ll have some organic eggs or a protein smoothie. 

Lunch: The BAS (Big-Ass Salad)

I usually break my fast with a giant salad around 1:00 or 2:00 in the afternoon. You start with a big bowl of greens, add whatever vegetables you have in your crisper or garden, a few ounces of leftover meat, some hard-boiled egg or cheese, and plenty of avocado oil dressing. It’s what my body wants mid-day, and I miss it when I don’t have it. 

Snack: It has to be quick

I usually don’t like to stop what I’m doing to eat, so when I want a snack, it can’t require any thought or effort whatsoever. I’ll have either a spoonful of coconut butter or almond butter, a handful of olives, or a Collagen Fuel Bar. The one I’m into right now is Macadamia Sea Salt. I can’t get enough of them. Dinner: Lots of vegetables with either wild-caught fish, organic chicken, or a grass-fed steak

Dinner is my main, slow meal. My wife Carrie and I will take time to prepare it, time to savor it, time to recap the day between bites. Dinner is not usually complicated – simple, easy to make, but prepared with care. It’s more of a ritual than just sustenance. 

The format may sound routine, but my meals are anything but. There are endless combinations you could come up with using a loose framework like this one.
