Last week I sent out a survey form and had so many responses! Thank you so much to all who shared… you have no idea what it means to me that so many of you were willing to respond.
I read through all the responses and got great ideas of how to help you more.
Some of you were asking specific individual questions. However I can’t respond individually because the survey was anonymous. There is no way for me to know who asked the question. So please don’t feel I’m ignoring you! Then there were the common themes. Some of them I’ve got information on already. (Yay!) SimplyCanning is a big site with a LOT of information. It is a matter of finding it. My best solution is to share some things here that will help. For those who expressed the need for more smaller batches, many canning recipes can be scaled down to smaller jars, or fewer jars. I’ve got an article here with lots of details on that. Small Batch Canning A large percentage of you are dealing with fear of your canner, mainly the pressure canner. I’ve got a video workshop that will help with that. Pressure canning must be done right but ‘right’ doesn’t mean hard. This workshop should enable you to understand how the canner works and how you can use it with confidence. (Use coupon code PRESSURECANNING for 50% off.) Pressure Canning Confidence (Don’t forget the coupon!) Dozens of you mentioned space. We all see the beautiful walk-in pantry images online with shelves and shelves of canned food. What if I told you I don’t have that? :). Nope. Here is an article with ideas for how to store your food when space is lacking. These are things I’ve done… maybe they will trigger some ideas for you in your situation. Creative Storage for Canning Jars And oh my goodness all the kind words from everyone! I told my assistant Rachel, it makes me want to cry! So very humbling. Thanks for your confidence. You totally made my day! What people said they appreciated about Simply Canning. (This is only a tiny portion of all the responses) - Your vast knowledge and how relatable you are. You feel like a friend.
- Love the book, and also the practical information on types of pressure canners and problem solving.
- The emphasis on SAFE canning.
- Easy step by step videos.
- The common sense approach. Too many are extremes. Either rule nazis without knowing why the rule exists. Or we'll do whatever we want (mostly because you say we can't) and without acknowledging the reason for the rule.
- Your archive of tested recipes that are easily replicated.
- Clear instructions, no rambling.
- I love all the instruction but I most enjoy learning from a woman with a sweet, Christ-like spirit. (This one made my eyes water just a bit :) )
- I enjoy your straightforward presentation and also your trips into the garden
- Full instructions. Explanations of why/not
- Recipes, videos showing how *you* do things, not just how *to* do things - I appreciate your personal take on these things.
- I really love the simplicity of your methods and recipes. It’s like learning from a family member or friend. You’re realistic and straightforward, and I trust that i don’t need to cross check your recipes in order to determine safety. That’s huge!! (Thank you for that trust! For everyone… don’t ever feel bad about double checking recipes. :).
- You’re down to earth style!
- Variety of topics along with clear and concise language in the instructions. I feel very safe when I turn to your website for information and I appreciate that, thank you.
- I really love understanding the why. I had put off canning for years even though I gardened and consider myself a seasoned cook and homemaker; I had it over complicated in my mind. Your teaching style just really made it very clear and easy for me to understand. I've shared what I learned from you and even taught a canning class in my church a few years ago. (I so loved this comment!!)
