What kind of cocoa do you have and do your cookies care?

Once upon a time, a major chocolate supplier sent us a pile of samples: A red cocoa from Africa, a black cocoa from South America, and a bunch of brown ones in between.

We promptly went to work making hot chocolate and brownies for blind taste tests. Alas none of them were better than the Ramstadt Breda cocoas we already had.

Really good cocoa has a high cocoa butter content. Most store cocoas have 8 to 10% cocoa butter content. That's not enough. You need at least 16 to 18%.
