As the area around the intersection of Kaliste Saloom Road and Ambassador Caffery Parkway has become the commercial core of Lafayette Parish, one small patch of grass has remained untouched. Not any more. A Lafayette franchisee for Popeyes Louisiana Kitchen leased it earlier this month.
