Dear CHAC Community,

Happy New Years, Feliz Ano Nuevo! We had so much fun cooking with you at the Fiesta Foods for the Holidays’ virtual events in December!!! Thank you so much for coming out and thank you to our Chefs; Dylan Fajardo-Anstine, Monserrat Alvarez Matehuala & Alonzo Barron and Nathan Garcia. CHAC is very excited for 2021 and to be able to serve the CHAC Community.

Recipe for the Month


Bison Pozole~By Nathan Garcia

Ingredients 

1 lb cubed Bison (or beef)

1 chopped medium to large onion

1 tablespoon chopped garlic

Seasoning mix to taste (Cajun, adobo, asada, season salt, etc.)

1 25 oz can of hominy, drained

1 qt broth (homemade if possible)

¼ to ½ cup red chile or enchilada sauce (homemade if possible)

1.5 teaspoons rosemary

1.5 teaspoons oregano

1 Bay leaf

2-3 tablespoons white vinegar

Olive oil

Garnish (crushed red chili, cabbage, lime, radish, chopped raw onion)

 

Directions

Brown meat, onion, garlic in a heavy bottomed pot with seasoning. Add broth and all ingredients except hominy. Add additional seasoning mix to taste. (NOTE: the broth recipe below does not contain salt. Most commercial broths are salty. Be sure to taste so as not to under/over salt.) Simmer 1 hour or until meat is tender. Add hominy and cook 15 minutes longer.

Joe N Martinez creates colorful photographs of the beautiful scenes he comes across in Colorado and New Mexico.  He finds the subjects of his photos as he walks about and discovers the beauty of his surroundings.  Sometimes they are the incredible sacred places he happens upon.  Sometimes they are the magnificent animals of the southwest.  Other times they are the simple sets of the local neighborhoods.  His portraits of his friends are created with empathy and love. Recently Joe has started working in a new medium.  His paintings are filled with texture and vivid energy.  His education is the School of Hard Knocks.  His style is uniquely his own.

CHAC Gallery & Cultural Center was founded in 1978 by a group of visual and performing artists. The organization was established as a place where Chicano/Latino artists were provided with a venue to explore visual and performance art and promote and preserve the Chicano/Latino culture through the expression of the arts.

CHAC is an inclusive community of creatives that are dedicated to preserving, showcasing, educating and reflecting the essence of Chicano/a/x, Latino/a/x and other multicultural/multiracial communities.
