For me slice and bake cookies, aka "refrigerator" or "ice box cookies," are friends and neighbors cookies. And they're almost "instant" cookies. You can make up three or four different batches, form the "logs" and put them in the refrigerator for up to three weeks.
When friends come over, slice up a half log and bake them. You'll have warm cookies in 15 minutes.
And when someone you know is quarantined or tests positive, run over a plate of cookies. They need to know that you're thinking of them and that you care. Cookies do that.
