Creamy Pasta with Crispy Mushrooms

 
 

Here’s what I’m serving for New Year’s Eve. It’s rich and elegant, but truly simple to pull together. What really makes it special is a mix of mushrooms; so buy two or three different varieties, choosing the best you can afford. I especially like the way long shreds of torn oyster and maitake mushrooms thread themselves through the pasta, but a little cremini or shiitake in there for big meaty flavor is great, too—and if you can find them, feathery lion’s mane mushrooms go especially well with the creamy sauce.

So long, 2019!
