My mother was of pioneer stock--"waste not, want not." So when most of the meat was gone from the chicken or turkey, she set it to simmer on the stove until the last of the meat dropped from the bones. Then she took out the bones and made soup.
For the noodles, she would roll out the dough on the counter and cut it into strips with a knife. She would let them dry for a bit and them slip them into the simmering soup. We loved that chicken noodle soup.
