This cake is fabulous! It's a knock-off made easy of the Saint Paul Turtle Cake. It's really pretty simple and it's a sensational holiday dessert.
1. Bake the cake. We're using Dad's Favorite Fudgy cake because it has mini chocolate chips right in the batter. 2. Frost it with fudge frosting. We're using a tub of frosting, heating it until just soft, and spreading all three layers. Don't bother frosting the sides. Be generous but you don't need to be neat. Sprinkle pecan pieces between the layers. 3. Drizzle it with caramel. Again use a tub of caramel frosting. Warm it in the microwave until it's a little runny and will drizzle down the sides. 4. Add more pecans. We used a mixture of chopped and halves.
