Putting chicken breasts into your Dutch oven and cooking them partially on the stove, partially simmering in the oven achieves two key taco successes. It gives you an initial sear, but it also infuses moisture to keep that chicken from drying out in the oven. And you'll get the bonus of extra-flavorful taco meat by cooking it in a mixture of chipotle peppers with adobo, broth, tomatillos and tomatoes.
