Zambrero’s finally got to the end of its fundraising burrito.

Having chewed its through a few rounds of talks, including with US giant Blackstone, the group’s closing in on a $250 million raising anchored by Scott Farquhar’s Skip Capital and a European private markets investor.

The European is Metric Capital Partners, which is a new name for us in Street Talk, and typically targets buyouts, buy-out funding and growth capital in pan-European businesses.

It’ll be the first external dollar that Zambrero founder Sam Prince has taken into the business and is expected to value it at more than $700 million.

The deal’s on track to be signed next week.
