Happy Thursday, everyone! During lunch at the French Quarter restaurant Sylvain last week, the look and feel was familiar, and there were hand sanitizer and masks everywhere. The restaurant was also trying out a new business model, as are other restaurants that are part of the LeBlanc + Smith group. These restaurants are aiming to make this the new reality to running eateries: There are fewer workers, but they're paid a base salary. They even have health insurance.
