Start with maybe a dozen cupcakes. Place a large scoop of ice cream on each. The ice cream will melt a little on the cupcakes, so hurry them to the freezer where they will freeze hard with the ice cream glued to the top of the cupcakes. Make the chocolate coating. It should be warm enough for dipping. Invert the cupcakes in the chocolate and put them back in the freezer until you are ready to serve them.
